My favorite part about cooking is looking around in the fridge and gathering what I have and figuring it out. I’ve been on the poorer side for my whole life so I have learned how to stretch out my grocery bill. I have tons of tips and tricks on doing that but that will come later. This recipe is perfect if you have a bunch of vegetables in your fridge that needs to be cooked. It’s so fresh but comforting.
You can cook your vegetables any way that you want but I love to sautee mushrooms and onions together to bring out the sweet flavor. You will need a pan for the sauce so I used the flavor from mushrooms and onions for the sauce.
Let’s talk about that delicious sauce, I left some of the onions in there when I mix in the butter and coconut flour. This is my preference at any point that I am making a sauce, that way I don’t have to use as much garlic and onion powder.
I made this vegetarian but I think thin sliced beef would work beautifully in this dish. Honestly, any meat would be great for this.
